Classic Banana Pudding

Instructions
Vanilla Pudding
  1. Starting with the vanilla wafers, layer the wafers, and bananas in a dish.
  2. In a medium sauce pan, whisk the milk, sugar, all purpose flour, egg yolks and salt, then cook on medium heat until mixture is thickened, taking care to stir regularly.
  3. Remove from heat, add vanilla and stir.
  4. Pour mixture over the layered bananas and vanilla wafers. Gently shake the dish from side to side for the pudding to fall thru the layers. If necessary, carefully poke holes with a butter knife to help the pudding fall thru the layers.
  5. Top with meringue or whipped cream. Serve warm or chill for 1-2 hours and serve.
Meringue
  1. Whisk egg whites and sugar together until combined.
  2. Create double boiler and stir mixture continuously until it has reached 140 degrees.
  3. Immediately remove mixture and place in bowl of a mixer with a whisk attachment.
  4. Whisk on high for 10 minutes.
  5. Spread meringue on Banana Pudding and fluff. Place under the broiler for 30 second to 1 minute. Keep an eye on it at this stage, because it will burn quickly.
Homemade Whipped Cream
  1. Pour all ingredients into a chilled mixing bowl fit for an electric mixer and whisk on high for 5-7 minutes, or until the mixture is a whipped velvety texture.
  2. Place whipped cream in fridge until ready to use. Note: you can use store bought whipped cream in lieu of making your own batch.
