Bacon Brussels Sprout Au Gratin

    Instructions
    1. Preheat oven to 400 degrees.
    2. Toss Brussels sprouts in olive oil, salt and pepper. Place in oven for 15-20 minutes or until Brussels sprouts are beginning to soften. Give the Brussels sprouts a good hearty stir at the half way mark. This allows for even cooking.
    3. In a medium bowl, mix the egg, heavy cream, onion powder, garlic powder and rosemary, then add the cheese.
    4. Remove the Brussels sprouts from the oven, reduce the heat to 350 degrees.
    5. Toss the Brussels sprouts with half of the bacon, then add the cheese mixture, stirring to combine well. Top dish with remaining bacon.
    6. Place Brussels sprouts back in the oven to cook for 25 minutes, or until cheese is bubbling.
    7. Remove from the oven and let sit for 5 minutes, then serve.
