10-Minute Kale Salad is quick, easy, has endless topping choices and will add a healthy touch to any meal or can be a meal.
When you think of kale, you probably think of a bitter, tough vegetable. Well, this 10-Minute Kale Salad will change your mind. For months, my playground playmate, aka my sister, has been telling me about this kale salad that she makes. When she described the salad, me knowing what I know about kale, it sounded like nails on a chalkboard and I was having no parts of it.
Fast forward to Thursday, April 27, 2017, my whole word changed for the better. I was introduced to a kale salad that was to die for from a local restaurant. It was sweet, had texture and it was a nice breath of fresh air from what I knew kale to be. It was everything my sister had previously tried to tell me months ago. 🙂
This 10-Minute Kale Salad is extremely versatile and you can add any toppings that you would like. I chose to add golden raisins, granny smith apples and almonds. Other additions can include walnuts or pecans, feta or parmesan cheese, any type of fresh squeezed citrus, bacon and the list goes on and on to any parts of your imagination it may take you.
I served this alongside Grilled Lamb Burgers with Mint Pesto & Yogurt Dill Sauce. It was a nice pairing. Here’s to 10-Minute Kale Salad, may it be everything this post made you Imagine and more.
10-Minute Kale Salad
Prep Time: 5 Minutes
Cook Time: 5 Minutes
- 2 Bunches of Kale, stems removed and rinsed
- 2-4 Tbsp Lemon Juice, fresh
- 1/2 Cup Golden Raisins
- 1/4 Cup almonds (pecans, walnut, etc.), optional
- 1/4 Cup Olive Oil
- 1/4 Cup Red Wine Vinegar
- Kosher Salt, to taste
- Black Pepper, to taste
- Toss kale with lemon juice and salt, then massage the kale until sweet and tender.
- Add toppings on this ingredient list (or ones of your choice) and serve.
